A former Professor of Microbiology at the University Of Virginia School Of Medicine, I have had a profound fascination for over twenty-five years for microbes and how they sculpt our macroscopic world. An experienced brewer, winemaker, cheesemaker, meat curer, kefir culturer, veggie pickler, wild mushroom forager, and infectious disease specialist, anything having to do with microbes turns me on; having trained at the Pasteur Institute of Paris, founded by the father of modern fermentation Louis Pasteur.

With all of my experience teaching at UVA under my belt, there is nothing I like more than sharing my passion for distillation with enthusiastic newbies and experienced moonshiners alike!

We enjoyed it very much, my boyfriend loved it and was very interested in the science aspect. Ian provided answers for almost all of his questions and overall we had a great time

Touring Vitae distillery was such a treat! Ian was incredibly knowledgeable about both the history of spirits and the distillation process. Ian's background as a science professor made the tour not only educational but approachable and fun (the mark of a good teacher)! The tour was a history and chemistry lesson rolled into one! It was a pleasure getting to know Ian and learn about his business. Will definetly return next time we are in the area. Couldn't reccommend more!

Had such a great experience with Ian and TJ! We had a few travel issues so ended up being late, but they were understanding, and accommodating and we had an amazing experience. Highly recommend and we will definitely be back. Thank you!

Ian is totally awesome we had such a good time. This is a great tour you get to walk around the entire distillery and get an inside look. You get Samples of 3 spirits. Worth doing if you are down to learn something new.

As a former bartender and science teacher this presentation offered more than I could have hoped for. Led by a former microbiology professor the information provided was super engaging and informative! My non-science loving husband left intrigued to the point that he actually used it as a springboard to learn more about the science of distillation. You will leave your tour entertained and informed. Then you will have a chance to try out some of the spirits you just learned about. Hands down the best tour of this type I have been on. An incredible value and a wonderful opportunity to learn from someone who is clearly passionate about what he does.
