What you'll do
You will meet Gregorio in the square of Paganico, a medieval village founded in the 13th Century by the Senese Republic. A car is necessary to get there. Gregorio will show you the way to Il Civettaio, so you will need to take your car and drive yourself. His organic farm, 10 minutes away by car. That's where you will start your winery visit and taste white and rosé wines. Gregorio will explain the process of winemaking, and you will learn that winemaking involves work all year round. On some dates, I will join, too. After visiting the cantina, you will grab your basket and blanket, and Gregorio will take you for a walk to the vineyards, going past the swimming pool and the olive groves. Here you can lay your blanket and open your basket for a picnic in the vineyards. Inside the basket will be freshly-made panzanella, cured meats, cheeses, bread, and red wine. You can also decide to have your meal comfortably seated at the table in front of the house and enjoy the view. In case of bad weather, the meal can be served inside the restaurant.
I am passionate about meeting new people, and I will be more than happy to share with you tips about places to visit and things to do in Maremma. I will be your online host, and Gregorio will welcome you in person. He is an award-winning winemaker and has a master's degree in economics from the most renowned university in Milan. He's clever and smart, is very friendly, and loves to share his experience with you.
