What you'll do
We'll start with the cooking class in a beautiful kitchen on a farm in Sebastopol. I'll teach you the intricacies of cooking 100% grass fed beef, which has a different flavor than conventional beef. We'll discuss slow cooking vs quick cooking techniques and I'll answer any questions you may have. We'll prepare our steak lunch together then enjoy it with a salad from my vegetable garden. I'll send you off with a braising cut and a searing cut to put your new knowledge to the test at home. After lunch you'll make the 10 minute scenic drive to Freestone Ranch, where the beef you just cooked and ate was raised. You'll meet the rancher and the cows and see firsthand how their work restores the ecosystem. Sip bone-broth as the sun begins to set over the picturesque rolling hills of Sonoma County.
I cooked in fine-dining restaurants in San Francisco for 10 years acquiring all my knowledge by working my way up in kitchens. In 2016 I decided to leave the restaurant industry to move to Sonoma County and teach myself how to grow food. Now I spend my time teaching all I've learned through cooking classes, gardening workshops, and also cooking privately and at a community-supported kitchen. I first met the ranchers of Freestone Ranch beef in 2017. I'm excited to work with their delicious product, showcase this beautiful land, and demystify the perceived challenges of cooking grass-fed beef.
