What you'll do
In a rural "masseria" (old farmhouse), between sheeps, goats, cows, pigs, horses and other animals we will produce our local and typical cheese: the ricotta cheese. We will take a tour of the farm, family-run by generations. With the younger owner, Maria and Giovanni, we will discovedr the old traditions and our local productions. We will learn how to do the ricotta cheese and these secrets will represent the treasure you will take with you. In this farmhouse you will see a rare ovine, typical of our area, called "moscia leccese". The historian Columella who lived in the I° century aD, wrote about this particular sheep and about all its qualities. The invention of cheese dates back to about six thousand years ago and Apulia became over the time the most important production center for Southern Italy.
Since early age, farms were our local supermarket for buying milk, cheese, fresh ricotta, strong ricotta and meat. We chose a farm or another for cheeses with different taste. "It's the grass that eat animals and the air that are different ..." my grandmother told us. And it was true. Despite the few kilometers of distance in the countryside, in the marine area or in the hills, the cheeses had a unique and different taste. Each with its own "air", taste and softness ... From our land and our unmistakable flavors comes this proposal.

Where you'll be
Into a rural farm we will learn all the aspects of the ricotta cheese production with the young owners and we will learn to produce it. Waiting for milk curdling we will visit the farm and different animals, where everything has remained like a time, where sheeps, cows, geese and many other farm animals graze freely in the red land, cultivated with wheat and olive trees.
