What you'll do

You’ll begin the class by learning the best kept secrets for authentic New Orleans cooking. After welcoming you and other guests into our home style kitchen, we will fill your glasses with wine, beer, soda or tea. You will discover the legendary Cajun Holy Trinity and the Holy Pope. We will then start cutting and prepping the vegetables in our spotless, clean kitchen and proceed to make the best New Orleans cuisine you’ve ever tasted.

Once the Cajun Holy Trinity and Pope is all chopped. Mise en place (everything in its place), we start the Dark Roux for the gumbo. After the gumbo, we start the light Roux for the Shrimp Etouffee.

After properly plating your meal, it's time to dine.

The last part of the class, (and possibly your favorite) will include teaching you how to make Bananas Foster. Yum! We’ll show you a fool-proof way to make this dessert that is sure to impress your friends and family.
Other things to note
This experience is completely Hands On, you will do all the prep work, cooking and eating. The class is taught by a certified Chef. Recipes will be emailed to you after class.

I call NOLA my second home so when I'm not here I wanted to take a little of NOLA back with me to Massachusetts. I couldn't think of a better thing than learning how to cook the classics. I took the Roux class with Chef Connor. He was so fantastic; he even taught me a self-proclaimed foodie and home cook some new tips and techniques. Beyond that, the food was amazing (Chicken and Andouille Sausage Gumbo, Shrimp Etouffee, Bananas’ Foster). Connor was personable and immediately made me and the other guests feel right at home. I can't wait to take another class.

Preston is amazing! What a nice guy. Preston has a true passion for cooking and loves to teach the class. We learned a lot about the New Orleans style of cooking as well as the history behind it. Now I know how to make an authentic roux and will be able to cook at least two new dishes for family and friends. Highly recommend this class. The best value for the buck.

Cooking courses are such a fun and interactive experience for visitors. I have done several in my travels abroad, and the Mardi Gras Cooking School experience was just as great as the ones I have done before. Chef Preston walked us through the Roux class with gusto and charm. We walked away with kitchen tips and super full bellies. DO NOT eat before coming to class. Trust me. You will want to eat everything that you make. Constructive Criticism: The previous cooking classes I've taken left the guests with printed recipes and instructions. I would have loved to leave with instructions so that I can prepare what we have learned for guests. One of the ingredients used in the roux cooking class was a spice concoction made by Mardi Gras Cooking School. You can purchase the bottle of the seasoning, but I wish we had the option to learn to cook dishes that we can learn to season without a premade mix.
