What you'll do
You will be greeted in the main plaza of Ollantaytambo by Lucho. He will bring you to see some interesting sites within the town center and tell you a bit about Ollanta. Then you will walk towards the "outskirts" of town (15 minutes) where we have our off-the-grid home & pachamanca (earth-oven) space. On the way you will pass by many local farms, "chacras." At our home, you will be invited into our cozy living room while we continue to heat up our "oven" and begin preparations. You will be able to move freely from our living room to the pachamanca space (which is less than 50 feet away) to observe & participate in the process. After the stones are well heated, we will begin! First, the embers of the fire are taken out. Then, in goes the potatoes, hot rocks, meat, more hot rocks, on top, herbs, corn & other veggies, grass, damp cloths & dirt! The food cooks for 30-40 minutes & then all the layers are unraveled to reveal our delicious pachamanca lunch! We will eat together around 1 pm.
Lucho & Chloe
We (Lucho & Chloe) have lived in Ollantaytambo (the last living Incan village) for 3 years & have immersed ourselves in learning about the traditional food of its people. Lucho learned from his mother about the traditional Incan cooking technique of Pachamanca & has regularly participated in Pachamancas his whole life. Lucho also worked as a professional tour guide in Peru for 12 years. We want to teach you about one of the oldest Andean traditions that still lives on to this day. And through this practice, show the strong connection & respect Andean people have for Mother Earth.
Pachamanca: Variety of grilled potatoes, sweet potatoes, chicken, lamb, corn, broad beans & typical sauces.
Chicha morada: a typical Peruvian drink that is made with purple corn, apples & cinnamon. It will be served with the meal.

Where you'll be
Lucho will lead you from the busy plaza of Ollanta to our tranquil neighborhood of farmland that has views of snow-capped mountains & Incan ruins. Here you will be welcomed into our home that was built by Lucho. Just steps outside is our pachamanca space. It consists of the pachamanca pit under a covered roof, & a wooden bench where you can sit, observe & ask questions. A few feet away is a round wooden table with where we will all eat together.
