What you'll do
The experience will begin at 10am in my kitchen: I hope to enthuse you so much, that by the end of the day you will never want to eat a shop-bought loaf again. You will get to experience the sensation of working with living dough and create something wholesome, all-natural, chewy and tasty. I shall show you the simple but effective Bertinet kneading technique to make light and airy dough quickly and efficiently. You will then make your own sourdough using my prepared ferment or starter and mixing it correctly with flour, water and then salt. We will then leave that sourdough to rest while we break for coffee and snack. Having done the initial rest we will leave for a further hour, before shaping into loaves, and putting them in proving baskets. Given time constraints we will then use the sourdough loaves I will have prepared the day before, which will have proved for 15 hours, and we will bake them to perfection. We then have a sumptuous late lunch to round-off your day and all guests will have bread to take home. Allergies, dietary choices and intolerance's: If you have any dietary requirements please let me know at the time of booking to ensure that I can meet them. Please note that I don't currently use gluten free ingredients so this experience is not suitable for you if you have this intolerance.
A couple of years ago I became healthily addicted to the taste of sourdough bread and a true convert. I became a regular buyer of Bertinet bread at Waitrose but then decided to learn how to make bread myself. And set off to Bath to learn from the master himself, Richard Bertinet. While the ingredients are few and simple - flour, water, ferment, salt - developing the skill and the confidence to "show the dough who is boss", can benefit from a guiding hand. In August 2018, I successfully completed Bertinet's week-long, intensive bread-making course and have been baking sourdough ever since. I now provide fresh sourdough for my Airbnb guests and am keen to share my passion, knowledge and Bertinet's 'kneading' technique with others, in a fun and relaxed environment. A buffet style lunch will be provided with fresh-baked bread, salad, charcuterie, cheese and fruit
