What you'll do

Immerse yourself in the incredible food culture and history of rural Mexico while learning how to cook traditional breakfast dishes made from the freshest seasonal ingredients. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ We will welcome the day with your choice of homemade atole, cafe de olla, or chilate, while learning about Mexico's rich and complicated relationships between food, culture, and identity. Together we will make masa and fresh tortillas the traditional way using our special hand-selected blends of indigenous maíz, then prepare some salsa in clay cajete and delicious antojitos (authentic Mexican bites) with the fresh ingredients from our fair-trade producers. While we cook, we will taste and interact with these ingredients that represent and celebrate the different regions of Mexico. Finally, we will share a meal together and enjoy beautiful conversation and the connections between food and culture.

I have built my career searching for the true identity & culture of Mexico through authentic cooking that celebrates pure ingredients, traditional methods and histories of our regions, and my passion is to share that with curious & hungry minds. In 2013, my family established a project of rural & cultural gastronomic sustainability to share the biodiversity of home. We serve 80% family-owned, fair-trade, organic, & wild foraged ingredients. We produce our own cheese, chocolate, & artisanal mezcal.

We will share the kitchen, which will become our home to share and explore together. Our kitchen is designed by Ludwig Godefroyto honor the traditional and authentic cooking methods of rural communities, and everything in it is for us to taste, learn, and experience.
