What you'll do
We'll cook traditional Cuban dishes using recipes I learned from my grandparents and gathered from the Cuban countryside. Oregano, cumin, garlic, sour orange, corn, taro-root, yucca. We'll embed those flavors and aromas into Cuban classic dishes such as rice and beans, fritters, green fried plantains, and others. We'll discover how simple and yet tasty, traditional Cuban cuisine can be. Over lunch, we'll discuss the challenges of running a private restaurant (paladar) in Cuba for over 25 years.

We are the owners of a local family restaurant called Ranchón La Mulata, and enthusiastic defenders of Cuba's culinary traditions. My passion for Cuban food started when my two grandmothers taught me the recipes I would later use to develop my own restaurant. Recipes I trust my son to keep.
