What you'll do
Cooking pasta with me begins with a visit to my favorite place to shop in Rome, the unique Mercato dell’ Unità. Locals have shopped here since before the days of supermarkets. After taking you through aisles piled high with fruit, vegetables and farm produce we’ll stroll to my apartment nearby. Once inside, we’ll uncork some sparkling prosecco and relax with an aperitivo. As I learned pasta making from my grandmother it is very much a social activity for me. It is important to me that you feel relaxed in my home before we approach the table. Then it’s time to don our aprons and get busy with flour, some eggs and a little bit of effort. Don’t worry, mixing is fun and you’ll have no problem getting your dough into silky fine thinness. You’ll also use a chitarra which is a traditional Italian tool used for “strumming” the dough into tagliatelle. Then I’ll take you into my kitchen to show you how to make a simple amatriciana sauce and the fillings for the ravioli. While your tagliatelli is cooking you can finish your ravioli envelopes. Once the ravioli is filled, your first dish will be ready for the table and you can enjoy your tagliatelli dish with some wine. While you are enjoying that, I’ll cook your ravioli for the second course and as we are in Rome we absolutely must finish with a creamy tiramisu dessert. Don’t worry, I’ll give you the recipes for this at the end.
All tools to make the pasta are provided
I learned to cook from my grandmother, since I was a child. I spent my summer holidays with her in Tuscany. So early in the morning we started trying something new for lunch. With her I learned to do the shopping, choosing the best seasonal products and not buying the excess. My kitchen is a simple kitchen made with seasonal products. Strictly bought at the Prati neighborhood market from trusted peasants. I like to revisit the recipes, in a simple and tasty way, always adding a little oil at the end of cooking, the extra virgin olive oil that we produce in Tuscany. My name is Ambra and I will be host - I run this experience partnering with my dear friend Eli.
