Handmade pasta with grandma

Cook with the best Italian chefs ever: obviously our grandmas, the Nonnas from Palombara! The grannies of our small village will show you how to prepare the perfect handmade pasta—no machines, just your hands, the freshest local ingredients, and love. All of these women started to make pasta in their childhood, keeping alive a tradition that is slowly disappearing. And they are ready to pass it to you! You’ll be part of our crazy big family for a day and join us as we walk the tiny medieval streets of Palombara Sabina to Grandma’s kitchen, located in the old winepress where our great-grandpas used to make wine that the community tapped straight from the barrel (or in Grandma's home... according to the weather). It's a special place for our family and the entire village. We will cook Ravioli, Fettuccine and Farfalle... you will be in a food coma at the end of the experience! Truffle experience Rome

We'll have a day trip through the woods in the mountain South-East of Rome, hunting truffles with the help of trained dogs, we will pass through areas rich in history of outstanding natural beauty. After the trip we will go to have lunch at my place, we will learn how to cook truffles dishes and we'll eat them for lunch with a very good wine. I will cook for you many different courses, all with fresh truffles! You will can taste many different combinations with fresh truffles. Other things to note: Depending by the period the truffle hunt takes place in different locations and the drive to the forest after the pick up can take between 20 to 50 minutes. The truffle hunting takes place on a mountain terrain, so be prepared to it, hiking shoes are recommended. This experience is also perfect for teams and team-building.

Immerse yourself in the sights and tastes of Italy as we explore the famous Mercato Trionfale, a historic and bustling food market in Rome, followed by a hands-on cooking adventure at my apartment. • We’ll sample local fare including artisanal meats and cheeses from several of our favorite sellers. • Next, we’ll learn how to handpick the perfect ingredients for our dishes, including farm-fresh eggs, flour, mozzarella di bufala, and tomatoes from top-tier vendors. • After a short walk back to our home, you’ll learn several of our time-honored techniques for preparing homemade tagliatelle, robust ragù sauce, and a traditional Italian dessert. • When we’ve finished preparing our meals, we’ll gather around the dining room table to relax, taste, and toast with delicious wine. You’ll take home some of Italian grandma’s best cooking secrets, which hopefully inspire you on your culinary adventures back home. Trionfale Market is open in the morning, from Monday to Saturday. You'll learn how arabica, robusta, and single-origin beans affect the flavor of the final cup. • Next, I’ll walk you through the steps of making the perfect espresso. • Finally, I’ll talk you through the process of roasting coffee as we roast a batch together. You’ll take home a small packet of the coffee that we’ve roasted, allowing you to practice your new skills at home.

Let me take you on a journey through Testaccio, a neighborhood I have an intimate connection to. As we wander through one of Rome’s most authentic neighborhoods, I’ll share my deep knowledge of the places and spaces where culture and cuisine intertwine. • Our day will start at the Piramide Cestia when we visit Campo Testaccio, the birthplace of AS Roma football club. We’ll explore some other nearby historical landmarks before making our way to the Nuovo Mercato di Testaccio. • Once we’re at the market, we’ll dive right into some of my favorite specialties. I’ll introduce you to local vendors as we sample some of their creations, including a porchetta sandwich and suppli, which are crispy rice balls stuffed with mozzarella and ragù. • We’ll finish off our tastings like any good Italian meal ends: with a perfectly brewed espresso. After our tour wraps up, I’ll leave you with some more recommendations and plenty of time to meander around the market at your own pace.

I will teach you how to make the real Italian pasta from scratch. We will make two italian traditional pastas: ravioli and fettuccine. In addition to making homemade pasta we will prepare different sauces: Tomato and basil, Amatriciana, Gricia, Butter and sage. I live in a 17° century building 50 meters close to Piazza Campo dei Fiori. I'll wait for you there, in one of the most ancient square of Rome to tell you welcome to this traditional experience. We'll have a short speach in my penthouse (with a 360 view of the Roma roofs) to break the ice and talk about roman cuisine, then I'll show you ingredients we'll need. Then the cooking class can begin! You will become a perfect italian chef in only 3 hours. When we are finished we will cook, eat, and savour our pasta together. I’ll tell you all the secrets for the italian handmade pasta and some tipa to replicate easy at home. Other things to note: We don't have a gluten free option, sorry. Please tell me for any food allergies or intolerance. Vegetarians are welcome! No gluten free, no vegan and no celiac options.
