Welcome drink on arrival, followed by a lesson on wine, visit to the 1620 winery, walk in the garden and among the vineyards and olive groves and finally rich wine tasting and good homemade food served in an enchanting place that you will love. Depending on the season it is possible to view the work in the vineyard or in the cellar. April and May you will see the small bunches of grapes; in September and October we will witness the harvest; between December and March we prune the vines and press the dried grapes for the Vino Santo. Welcome drink at the arrival, guided visit of the middle age cellar, in the garden followed by a walk in the vineyards and in the olive groves and finally rich wine tasting and nice home made 4 courses Tuscan lunch served in a charming place that you will love it. According with the season you can be part of the works in the vineyards or in in the cellar. All the seasons are good to visit us, obviously from March to November you can see the colours of our hills. very suggested September during the grape harvest, March, when we prune the vines and we press the dried grapes for the dessert wine Vin Santo, November when we pick the olives and we crush them. On summer you can do wonderful hike in the vineyards and maybe you can help to bottle the wine. Some days of the year it could be possible to do also a wine tasting from the barrels with our master of wine who will explain the secrets of the winemaking. If you love balsamic vinegar, we will introduce in its history ; you could try vinegar with different ageing. You will also discover the incredible flavour of the oil white truffle. Making of handmade pecorino cheese!
The experience is focused on making cheese by hands. We start from milking room, where the participants could see the milking machine that is used today but, above all, they could also try (and may be learn!) to milk the sheeps with their hands, as we used to do 30 years ago. After that we start with the real making of pecorino cheese in a beautiful basement with stone wall, that originally was a church or may be a monastery. We will use the ancient methods and tools to make pecorino cheese, that our grandparents thaught us and handed down to us. In this step the participant's collaboration will be really important (from the older one to the youngest!), they will make with their hands a little cheese wheel that they will bring with them as a souvenir of this awesome experience, but first of all as a symbol of their "work" in the noble art of cheesmaker, unfortunatly forgotten. Obviously the guests could visit the entire farm with its animals: they could feed the little lambs, they could see our chikens with their chicks and they could visit our grazing lands where they will find our allies against wolf's attacks : the guardan dogs! (Clearly during the experience there will be some pecorino cheese and oil tasting!) Chianti Wine Experience, since Seven generations
When all the people of the Group arrive at the winery, they have to know each other to create the right atmosphere and friendship and i'll explain how consist the wine-experience. In the beginning,I'll explain how we work organically and how we produce excellent grapes. After you'll discover 3 different cellars, The Vinsantaia, the place where the Vinsanto (dessert wine) is made, La Tinaia where the Chianti DOCG and SuperTuscan ferment and the last is the Barriccaia, a 200 years old cellar totally underground, where the wine age in french oak barrell. At the end you'll taste 5 different wines with typical salami, prosciutto, pecorino cheese, bruschetta with fresh tomato from our organic garden and cantuccini cookies. If you have any food restrictions/allergy, please let me know in advance. You'll jump into the journey of a professional winemaker. You'll be full involved in the wine-experience, lots of information and at the end of the experience you have lots of great memories, good knowledge about wines and lots of smile on your face. Hunt for truffles in the Tuscan woods
My family, my dog, Billo ,and I will guide you in truffle hunting in our beautiful woods in Chianti. Truffle hunting is an ancient tradition in Tuscany, and has only one rule—respect nature. For this reason, it will be necessary to conduct a small briefing before going into the woods, a sacred place for truffle hunters. During the hunt, I will tell you about the truffle, the magic of its traditions, its history, mythology, and uses in the kitchen. You will learn how to recognize and distinguish a good truffle from other fake "truffles" of inferior quality. After the hunt, we will return home for a scheduled lunch or dinner, based on fresh, real truffles and served with our own wine and extra virgin olive oil. We will show you how to clean truffles and prepare typical truffle recipes, such as crostini al tartufo, tagliatelle al tartufo, and more.

Tuscan cooking class
Katia and Fulvio welcome you to their family county house. We'll lead together a Tuscan cooking class, so you can learn traditional Tuscan recipes, but more important you will discover how food should really taste! The activity is an introduction to scuba diving. A quick but explanatory lesson will be held on the techniques for diving with cylinders and all the safety concepts. Subsequently the necessary equipment will be provided. The material will be tested and studied, finally there will be a boat trip to reach one of the most beautiful diving areas of the island (inside the National Park) to perform a real dive together 1 to 1 by an experienced diving instructor. Hiking through castles and hamlets
In the San Gimignano countryside, among the most beautiful and most visited in Tuscany, there are pathways which connect the castle with the villages founded outside the city walls. We’ll walk along some parts of the Via Francigena and the Via del Sale (Salt Road) where they actually intertwine and we’ll go through what are now small, pleasant villages but were once castles involved in bloody battles between San Gimignano and Volterra. A territory which can speak, and tell of its peasant tradition and how, thanks to illuminated people, the countryside was made productive and less hostile for those who lived and worked there. We won’t miss out on wonderful views on the most famous towers in the world! The blue lagoon hiking tour
With this tour I’ll lead you to discover a small jewel hidden in the countryside of Colle Val d’Elsa. We’ll go along a part of a tract of the Via Francigena which connects San Gimignano with Colle Val d’Elsa, and going through small villages and farms we’ll descend into the valley of a torrent which once fed an old mill, the ruins of which can still be seen hidden in the vegetation. One canal of this old mill today gives origin to one of the waterfalls which feed that which the local people call “the Blue Lagoon”, a small but spectacular stretch of water which is coloured green, blue and turquoise reflecting the colours of the wood that surrounds it. The imposing Old Mill
With this hike we will immerse ourselves in the beauty of Val di Pesa! We will walk along the Pesa River, accompanied by the relaxing sound of the water flowing and discovering the vegetation and fauna that populate this environment. Then we will climb up the Chianti hills, among vineyards, farms and old villas to reach an ancient and imposing jewel hidden in the woods: the ruins of Mulinaccio. A unique example of industrial archaeology that will tell us about noble families who have shaped the landscape for their delight and for economic profit, but also of ancient crafts and traditions that were unfortunately almost lost today. We will then reach a beautiful farm, built on top of a panoramic hill and that during World War II it was a refuge for the local population and theater of a bloody battle, today excellence in the production of wine, oil and typical products exclusively organic. Chianti Classico and the most famous of Super Tuscans, Tignanello, are born here!
