WHAT TO TAKE:
The province of Isernia is a real mine for the extraction of black and white truffles. Molisana gastronomy has pastoral and peasant origins that are found in the genuineness of the ingredients and in the simplicity of the preparation of the dishes.
The products are the typical ones related to the earth like grain, vegetables, pork and lamb. Typical dishes of this region are the critiques (guitar pasta), the cavatelli (potato and flour grinds) with tomato and pork, the bean laganelle (a kind of lasagne).
The second typical dish of Isernia are roasted turcotini, a very elaborate recipe based on lamb's lamb.
Also worthy of note are the very good sausages such as sausages and the sundried and also cheeses such as caciocavallo, mozzarella and scamorze, ragged, husky and pecorino.
And again, the oil, especially that of Venafro, very renowned; Oviculture is widely practiced in the province of Isernia and guarantees high-quality production.
Among the sweets we find ingredients such as dried fruit, honey, pine nuts: the typical sweets are the socks stuffed with cocoa, chick peas, cinnamon pine nuts and honey, almonds peppercorns, cabbages (chestnuts filled with donuts). Among the wines we find Biferno (white, red and rosé) and the Pentro (white, red and rosé), who have earned the DOC wine label. We also find typical liqueurs like limoncello.
