Por conta disso, houve a necessidade da criação da Bolsa Oficial do Café ainda em 1922. Em 1970, houve a desativação das atividades e o local virou uma referência histórica do período. Hoje, é possível conhecer o Salão do Pregão, onde eram realizadas as cotações dos preços dos cafés, além de máquinas e técnicas que eram usadas, os mais variados tipos do grão.
