Check to see what time it closes in the summer. Start at the beginning and go until the end; or get on and off as you check out art galleries, bars, the Chelsea Market, etc. along the way. Be sure to bring your camera. You can literally spend the whole day along the High Line. Lots of fun stuff for kids.
