Sightseeing

Impressive ruins of a 12th century monastery with surviving original parts.
The top of Calton Hill is only a short detour on your way to the centre of town and gives you great views over Edinburgh and an insight into the Athens of the North. The lights are most beautiful around sunset but mornings are better if you want to avoid the crowds.

A 17th century tenement house , one of the oldest buildings on the Royal Mile, can only be visited by guided tour and it's great if you want to find out more about how life was in the Old Town of Edinburgh in the 17th century. There is a shop on the ground floor where you can buy real Scottish souvenirs, tasteful and good quality stuff actually made in Scotland.

Arts & Culture

If you are into contemporary art this is a very interesting place. It is a little further from the other sights (about 30 mins walking from central Princes St) but there is an hourly shuttle bus which picks you up at the National Gallery. Once there, check out the Water of Leith Walkway too just next to the Gallery of Modern Art!
